What our ovens are made of?
Our ovens are made of a refractory concrete. Refractory concrete is concrete that can withstand high temperatures. We add steel fibers to our concrete for added strength. Our ovens can handle temperatures up to 2200 degrees. See our product specification page for more info!
Oven structure:
Our ovens are a one piece unit. The obvious benefit of one piece is you set it down and are done. Many ovens are sold as modular units, requiring the sections to be mortared together. All ovens have some cracking. Modular ovens will tend to crack on the mortared seams, the downfall of this is that there are no steel fibers to reinforce and keep the structure strong where the cracking takes place. Cooking concept: The basic principle of using a wood fired oven is the retained heat in the thermal mass of the walls and the floor. The fire is started and the cool walls absorb the heat. Once the walls are saturated with heat, the coals can be removed and the "thermal battery" will do the cooking. Most ovens on the market have a 2"-3" wall, we build ours with a 4" wall for more thermal storage. For the most part coals are removed before cooking anything other than pizza, but this will come down to the preference and your style of cooking.

Our Infinity Ovens have a patent pending design where we can narrow down the oven which allows for a larger oven on a smaller footprint space while retaining the dome height to door opening ratio which is crucial to the performance of a wood fired oven. Another benefit of our design is allowing a larger door opening on a smaller oven for better access to items being cooked.
